Storage & Cleaning
Do not buy too ripe tomatoes. They are less spicy and difficult to process. Best to buy tomatoes that feel firm and have a shiny appearance. Tomatoes are best stored at a temperature of 12 to 16 ° C with a relative humidity of 85 to 90%. A well ventilated storing is good for the fruit. Therefore, store tomatoes in a cool place, but not in the refrigerator. They can be kept at least one week. Tomatoes are very sensitive to low temperature decay. Too cold storage also affects the taste. Wash the tomatoes before use or manufacture. They can also be stored in the freezer but than they are only useable for soups, sauces and other hot dishes.
